Half-Life is on the GoldSource Engine(Valve's modified version Quake engine), while Half-Life: Source is on the Source Engine, the successor of the GoldSource engine.
The only difference between the two games is that HL:S does not have multiplayer on itself and has a chapter select menu, whereas Half-Life you just start a new game from scratch. Another difference is that you can spawn NPCs in HL:S.
The point is both games have their pros and cons, and game-play won't differ between each of them. (Excluding Multiplayer)
