So far I've heard that you can ride piggies with this update.

Carrots, potatoes, golden carrots, riding pigs now controllable (oops), the wither, wither skeletons (not exactly sure what they are called), collecting heads, invisibility potions, frames, new map behavior, flower pots, night vision potions, beacons, new villager AI, villagers are more self aware, villagers will make better trades overtime if you help them and trade with them, zombie villagers, baby zombies that run very fast, rehabilitating villages, mobs wear armor and carry tools occasionally, witches and witch huts added in swamp biomes, slimes now spawn in swamps exclusively, you can dye leather armor, and because there is so much I will just stop....
