For me, I chose Windows 8.1. It runs everything Windows 7 did at either equal speed or faster. Starts up and shuts down way faster. No compatibility issues for me (runs everything I used to use on Windows 7 or Vista or XP).
I almost never use or even see the metro/tile start screen, so its basically a Windows 7 experience with some minor tweaks and improvements.

Quite honestly Demon, Windows 8 isn't all that weird or bad. I watched a single video on how to navigate and how to do various things and was able to go straight into using it pretty easily. Windows 8: Press CTRL+F, enter "cmd", find the correct icon, click on it - Time needed: > 5 secs

Windows 8.1 with the start button. Just get "startisback" for windows 8.1, makes it just like windows 7, just better with more features.
